100% Nero d’Avola. Soft pressing and destemming from 10 up to 15 days, depending on the vintage. The extraction takes place through traditional pumpings. Fermentation temperature 26°C. After malolactic fermentation, wine is aged 4 months in stainless steel tanks, then in bottle for another 4 months.

Tasting Notes

Bright and tangy, this light to medium-bodied red features light, taut tannins and lively flavors of brambly blackberry, raspberry, wild herb and spice. Tactile and rich but lively, with delightful easy to drink quality. A very pretty wine the aromas and flavors of which linger long on the aftertaste This hearty red, full of notes of cherries and roasted meat will pair well with a myriad of red-meat dishes. Think of: lamb, sausages, grilled meats of all kinds, roast pork, barbecue, stews, game – venison, squab, dishes with black olives, dishes with lots of black pepper, and dishes with pungent herbs.

About Assuli

Roberto Caruso, owner of Assuli, is a Sicilian who loves his homeland and whose bond with agriculture and countryside exists for generations. Giacomo Caruso, Roberto’s father, founded the ‘Sicilmarmi’ in 1948 and discovered a new type of marble, the ‘Perlato di Sicilia’. Thanks to the increasing demand, he was able to acquire new quarries and to expand the company. Following the market success and the great contribution he gave to the economy of his homeland, Giacomo Caruso was appointed “Cavaliere del Lavoro.” The Caruso family has always had a strong relationship with the ‘countryside’, especially with the vineyard, expanding its own cultivated plots in order to obtain a wine that reflect the family culture and tradition. Through Assuli, Roberto Caruso decided to consolidate all the efforts made by bottling an ancient knowledge, translated in a genuine wine with an unmistakable character.
