60% Carignan 20%, Grenache, 15% Syrah and 5% Lledoner Pelut, all farmed organically from four parcels of especially old vines in Lesquerde, Maury and Saint-Paul-de-Fenouillet. The vineyards are still plowed by horse! Native yeast fermentation, aged in older barrel with an average production of 165 six-packs. Minimal sulfur added only at bottling. No fining or filtration. 14% alcohol. This deep, dark and brooding wine needs air to show its best! Deep, dark, perfumed and floral berry fruit with notes of licorice, blueberry, cherry, clove, cinnamon and pepper. Decant to drink now or age for another 10-15 years. The word Chorèmes comes from the Greek and is a spatial cognition term referring to routes between spaces–in this case, pathways (both physical and metaphysical) between plots of vines and between vines themselves.
