100% certified organic and biodynamic Pinot Blanc from seven acres of vineyards in Ammerschwihr on granite soils planted between 1975 and 2010. Native yeast fermentation. Aged in large, neutral foudre. Bottled unfined and unfiltered with minimal sulphur. On the nose, this shows off ripe pear, kiwi and pineapple along with some wet stone , white flowers and honeycomb aromas. Light to medium bodied and dry but not bone dry, this is very balanced between lush fruit and and fresh, clean acidity. For more than 400 years, Jean-Baptiste Adam and his family have been grape growers and winemakers in Ammerschwihr. Jean-Baptiste’s daughter, Laure, is the 15th generation to work in the family business. Pair this with richly flavored dishes, including tarte flambée, poultry in cream sauce, schintzel, mushrooms or risotto.
