40% Rolle (aka Vermentino), 30% Ugni Blanc, 25% Sémillon, 5% Clairette all biodynamically farmed from vineyards up to 90 years old on clay and limestone soils. Fermentation, including full malo, occurs naturally with indigenous yeasts. The Ugni Blanc fermented in sandstone amphora and stainless steel, the Sémillon in neutral French barriques, and the Rolle in demi-muid. Total new oak is 10%. 12.5% alcohol. Clos Saint-Joseph is a 12.5 acre estate and the only domaine in the tiny town of Villars-sur-Var, forty-five minutes north of Nice along a snaking river valley flanked by tall walls of stratified rock. This remote, high-altitude microclimate yields a mineral-driven, creamy wine with pear, apricot and juicy citrus fruit with a salty and stony finish.
