This is by far our driest Prosecco, made in the century-old traditional style. It’s two wines in one! While it resembles a pet-nat in both form and flavor, Sui Lieviti is most definitely not a pet-nat. Secondary fermentation took place in the bottle and the lees are settled at the bottom. The wine is not disgorged. When first poured, it’s a sleek, extra dry sparkler, resulting in a relatively normal-looking glass of Prosecco with crisp, ripe fresh fruit and floral notes. With gentle inversion of the bottle, integrating the lees, the result is a wine with a more nourished, wide mouth feel. The extended contact with lees offers more complexity with additional aromas and flavors, with a pronounced yeasty note. Try it both ways and see which you prefer!
