100% certified organic Verdejo from a 2.5 acre, 40 year old vineyard at 2500’ elevation. All grapes are hand-harvested, destemmed, and macerated for 24 hours before pressing. The juice is wild yeast fermented in used French barrels, raised on lees for 9 months, and bottled with a light filtration and minimal sulphur. 600 cases made. This is one of the most complex, serious Verdejos we’ve ever tasted. Rich, creamy in texture, and intensely vibrant, this shows off notes of ripe yellow apple, pear, apricot, lime peel, honey, fennel, chamomile tea and hazelnut. A slight oxidative character provides a pleasing undercurrent to the rich mouthfeel, with bright acidity keeping it fresh. The winery recommends pairing it with trout wrapped in jamón serrano, but it will make almost any fish dish shine. For fans of white Burgundy and the Jura.
