100% organic and biodynamic Pinot Grigio from 15-35 year old vines on marl, clay and limestone, right over the border from Collio in Italy. Hand harvested and macerated on the skins for 24 hours. Native yeast fermentation and aging in stainless steel. 13.5% alcohol. There’s just a touch of copper in the color from the pink skins of the grape
variety and 24 hours of skin contact, in the traditional ‘Ramato’ style of the region. It entices with aromas of sweet spices, red apple, and fresh-cut pear. The palate follows through, building on notes of spiced pear and golden plum, with a lightly mineral texture and gentle acidity. This is an elegant Pinot Grigio with so much more character than most. It is excellent with seafood dishes and not too spicy Asian, Thai, and modern Japanese cuisine.
