100% Sémillon; farmed sustainably; 45-50 year old vines; hand-harvested in multiple passes (“tries”) to select botrytized berries. Grapes are pressed immediately after each pass; fermentation occurs slowly in temperature-controlled stainless steel and oak barrels. Aged 12-24 months in French Bordelaise oak barrels (approximately 25–30% new) to develop texture and aromatic complexity. 13.5% alcohol. Layers of honeyed apricot, candied citrus peel, green spice and acacia blossom unfold over a silky, luscious palate balanced by bright acidity. Notes of crème brûlée, vanilla, and saffron linger on a long, harmonious finish.
