50% Hondarrabi Beltza, 50% Hondarrabi Zuri; with the backbone of the blend coming from an old Beltza vineyard planted in 1840, preserved by the Ameztoi family for generations. After handpicking, the Beltza (red) and Zuri (white) grapes are combined, direct pressed, and fermented with native yeasts in steel. Towards the end of alcoholic fermentation, the tanks are closed to preserve the naturally occurring carbonation, which is the preferred style of Getaria. The tanks are then kept chilled to near freezing before bottling, which preserves the wine’s delicate, effervescent character and signature mousse. Light, prickly, slightly effervescent and bone dry, with sweet strawberry, candied red fruits sprinkled with sea salt and lime juice. So good with fish tacos. Like natural, dry pink lemonade!
