100% Lambrusco di Sorbara planted in 1991 on 7 hectares of well drained alluvial soil. Organic farming. Harvested by hand. 4-6 hour fermentation/maceration to obtain rose color. Secondary fermentation occurs in autoclaves over a period of 60 days. Residual sugar: 1g/L.
A strikingly fresh and energetic Lambrusco with a vivid ruby-pink hue. The nose bursts with wild strawberry, tart cherry, pomegranate, and a touch of orange peel, lifted by floral notes of violet. On the palate, it’s light-bodied and bone-dry, with crisp acidity, fine bubbles, and a refreshing, mouthwatering finish. A benchmark example of Sorbara’s elegance and food-friendly charm.
The art of winemaker has been practiced at this estate for over 100 years, with their founding in 1919. Today the estate is comprised of 12 hectares focusing on two varieties of the Lambrusco family of grapes: Lambrusco di Sorbara – planted to sandy soils – that has a tendency to give a wine a vibrant pink sheen and a soft cascade of fruit, and Lambrusco di Grasparosso – planted to denser clay soils – that showcases a deep, dark color in the glass while providing plenty of structure and texture to serve as a perfect foil at the dinner table.
All of the Fiorini vineyards are worked by hand with fruit hand harvested from vines that are farmed by strict organic methods.
