100% Chardonnay (certified organic and biodynamic) from Cramant, Avize, Oger, Mesnil sur Oger and Chouilly Grand Cru. Hand harvested, fermented and aged in tank. 7g/L dosage. Base vintage is 2016 with 30% reserve wines. Winemaker Erick de Sousa and his family are devoted to quality, and their cultivation of older vines (50+ years), use of organic fertilizer, and rezspect for the terroir have produced exceptional wines at bargain prices since 1986. The chalky soil accentuates this champagne’s minerality, lending it finesse, elegance and vivacity. Its intense nose is evocative of dried pineapple, fresh roasted coffee, eucalyptus and lemony notes, as well as a very expressive floral character. The palate is very round with honeyed accents. The finish is long and delightfully refreshing.
