Emilie Lebeau and her husband Florent may only be in their early 30s, but they oversee a multi-generation, multi-century, certified organic farm that sits in what seems to be Champagne’s most “in crowd”, of-the-moment village, Chavot-Courcourt. This young couple bottles instantly gratifying, complexly textured, long lees-aged, and undeniably delicious and crowd pleasing wines. Mostly Chardonnay with a little free-run Pinot Noir juice. There is deep minerality and terroir-driven tension for Champagne geeks and also luxurious fruit, biscuity notes and judicious 3-4 gram dosage. High-toned aromas of pink lady apple, quince, white cherry, citrus peel, crusty bread, chopped hazelnuts, ginger, and wet stones. Well-balanced and highly refreshing.
