An organic blend of Xarel·lo, Macabeu, Parellada and Chardonnay. Native yeast fermentation and 48 months of lees aging before disgorgement. No dosage. 11.5% alcohol. Intense yet elegant, this is a definite cut above your average Cava. Aromas of nuts and pastry linger alongside fresh citrus , ripe apple and white peach fruit. Medium bodied and slightly creamy in texture, with punchy acidity and a slightly salty finish.
Now in its third generation, Cava Joan Colet Rius is run by Jaume Colet Romero, a firm proponent of the integrity and quality of the wines of Penedès. In addition to making his family’s wines, he has embarked on a journey to craft still wines of the region’s native varieties, and is a founding winemaker in the Vida Penedès consortium. Fixed firmly in the middle of Sant Sadurní d’Anoia, the winery of Joan Colet Rius appears as no more than a wooden double door on a city street, but the winery inside, and it’s cave, or ‘cava’ below, extend beneath the city, housing their minuscule cellar of 3000 cases. In a region known for great scale and volume, a winery like theirs is quite uncommon. In lieu of staggering production, the family focuses on single vintage, organic wines of extended elevage.
