100% organic Vitovska from the Carso (Karst) subregion, a limestone plateau that reaches from northeastern Italy into southwestern Slovenia. The fruit comes from five acres of family-planted vineyards carved from the surrounding forest. Hand harvested, fermented with native yeasts and aged in older oak barrels for two years. Bottled unfined and unfiltered. Aromas of lemon oil, apricot pit, wildflowers. Pure and vibrant; structured, with a pronounced minerality. Pair with cured meats or tangy aged cheeses; fresh shellfish pasta with local herbs. With just six acres of vineyards, the family produces under 9,000 bottles per year. Matej Skerlj and his sister Kristina in 2004 started making their own wines from native grape varieties Terrano, Malvasia and Vitoska, from this property founded by his grandfather as an ‘osmize,’ or local farm-restaurant.
