100% organic and biodynamic Cabernet Franc from vines at least fifty years old. The wine is a blend of two distinct terroirs: the terraces between the Loire river and hillside, consisting of a clay-flint mixture over limestone, and the higher elevation, hillside terraces that contain more distinct sections of clay and flint over the same limestone bedrock. Native-yeast fermentation in small concrete vats with a maceration of 30 days. Aged 6 months in 10-year-old foudre with a gentle racking prior to bottling unfined and unfiltered with minimal sulphur. Pours a beutiful purple color and shows off aromas of pepper, violet, raspberry, red plum, mint, clove and earth. Similar flavors to the nose wrapped up in a bone dry, medium bodied wine with grippy tannins and a long finish. Drink now or age 5+ years.
