100% certified biodynamic Trebbiano Modena. Hand harvested from 20 year old vines on volcanic soils. Fermentation starts with native yeasts, and then bottle refermented with frozen must from the same pressing, capturing its natural effervescence. Bottled unfined and unfilteres with minimal (20ppm) sulphur. 11% alcohol.
Dry, fizzy, citrusy and easy drinking. Notes of pear, apple cider, citrus, elderflower, salt, toasted almond, and a hint of yeastiness. Dry and crisp without being overly acidic. Like a slightly funkier Martinelli’s sparkling apple cider!
Azienda Agricola Il Farneto is an 8-hectare (19.77 acre) winery nestled between the hills of Scandiano and Canossa in Castellarano, Western Emilia-Romagna. Established in the mid-90s by Marco Bertoni, the winery is dedicated to producing natural wines that embody their terroirs. Winemaker Flavio Restani creates exquisite wines using time-honored techniques that prioritize the long-term vitality of the soils. The wines are named after the local Rio Rocca river, celebrated for its distinctive geological features and natural wilderness. Marco, who dislikes modern, efficiency-oriented agriculture, pursues a recycling-oriented cultivation, respecting the natural environment, while adopting biodynamic agriculture, focusing mainly on manual labor. He does not use any pesticides or fertilizers (not even compost) in the vineyards.
