Around 90% Chardonnay and 10% Savagnin, farmed organically (uncertified) and made in the ouillé style, meaning that it isn’t purposely exposed to air for an extended time during élevage. This is made entirely in tank and production averages 700 cases. This has a powerfully aromatic nose of dried fruits like apple, peach, and pear with a green almond nuttiness and fresh white flowers providing overtones to the pithy citrus and dried tree fruit character. Medium bodied, with some creaminess of texture, but mostly fresh and lean, with brisk acidity on the finish. Very mineral driven and food friendly. Domaine Jean-Luc Mouillard was created in 1991 in the Jura, a lesser known region of Eastern France sandwiched between Burgundy in the west and Switzerland in the east.
