100% Chardonnay sourced from 30+-year-old vines planted on Kimmeridgian limestone soils (the same as in Chablis). Native yeast fermentatiuon in stainless steel to preserve freshness and purity. The wine is then aged for 8 to 10 months on the fine lees in stainless steel tanks—no oak influence whatsoever—focusing purely on the clarity of site and grape. Farming is sustainable with a focus on biodiversity, and Morin intervenes minimally in the cellar to let the vineyard speak. This is quintessential cool-climate Chardonnay—bright, linear, and pure. Aromas of green apple, lemon zest, crushed oyster shell, and a whisper of white flowers lead into a palate that’s taut and mineral-driven.
