70% Cabernet Sauvignon and 30% Merlot, all sustainably farmed from an estate vineyard at 1,200’ elevation. The own-rooted vines were planted by Paolo Paoloni himself beginning in 1997. His vineyard sites are more sloped and rolling than most, as well as at a higher elevation than the majority of the valley. Fermented in stainless steel and aged for 18 months in 2,500 liter neutral French oak foudres. Minimal sulphur additions. 13.5% alcohol. 2,000 cases made.
This medium to full bodied, smooth red has a great mix of bright, fresh black and red fruits, cedar and baking spice notes. Lots of red cherry Merlot fruit. The tannins are soft and the acidity is brisk but easy-going. This is a wonderful weeknight Cab to pair with many different foods or enjoy by itself as an aperitif.
Founded by Paolo Paoloni in 1998, the winery and its vineyards are located in Valle de Guadalupe - mid valley, high on a southern facing slope. The vines are planted to a wide variety of grapes, including Sangiovese, Montepulciano, Nebbiolo, Brunello, Aglianico, Chardonnay, Cabernet Sauvignon, Merlot, Petit Verdot, Nero d’Avola, and Syrah. Paolo is Italian born but now a Mexican citizen, and he imported all of the cutting to plant his vineyards from Italy. While he markets under the name of “Paoloni” for export, his estate in Valle de Guadalupe is marketed under the name “Villa Montefiori”. Annual production is 10,000 cases across 10 different wines.
