No dosage and no sulphur additions- zero-zero! Only 1,161 bottles made. Zesty, light and clean. Pithy citrus, tart red berries, and kiwi on the nose. Bone dry and lean, with electric acidity. Paul-Bastien Clergeot’s family has been growers in Champagne for generations, and they are located in the small, sleepy village of Polisot, home to only 341 people. The estate vineyard occupies 18 acres spread over 3 villages. From the beginning, Paul-Bastien has embraced the principles of organic farming. His philosophy is, “one parcelle, one grape, and one year.”
