55% Chardonnay, 25% Pinot Meunier, 20% Pinot Noir from vineyards in the villages of Moussy, Pierry and Chavot-Courcourt. Farming is organic and biodynamic (uncertified). Hand harvested and direct pressed. Native yeast fermentation in barrels, demi-muids and foudres. Eight months oak aging with partial malolactic fermentation. Aged 40 months on the lees plus 3 months in bottle after disgorgement, no fining and light filtration, disgorgement with dosage liqueur vinified in barrel. 4g/L dosage. Minimal sulphur additions. With a golden hue tinged with pink, this wine displays a very fine persistent bead. The nose shows notes of plum, almond & dried floral aromas. As the wine gently opens, it shows notes of bread & butter, confirming the lees time. Flavors of baked apple, marzipan and quince.
