50% Syrah, 20% Mourvèdre, 15% Grenache, 10% Cabernet Sauvignon, 5% various other native grapes, all organically farmed. Vines are up to 90 years old. Fermentation occurs naturally with indigenous yeasts in concrete tankwith about 20% whole clusters. Light pump-overs at beginning of fermentation followed by light punchdowns. Aged in foudre and demi-muids for 12 months with about 10-15% new oak. Bottled unfined and unfiltered with minimal sulphur. This is a fairly delicate wine that pours a surprisingly pale color. Yet, it is still a rich, earthy, and intense Provence red with a deep profile of dark fruits (blackberry, black cherry) nicely balanced by savory notes of leather, smoke, spice, and black pepper. This vintage has the tannic structure to improve and develop even more complexity over the next few years.
