100% organic 100% Xarel-lo Vermell from the Politxonada vineyard. A soft pressing is followed by spontaneous fermentation with native yeasts in used 700-liter Burgundy barrels, where it remains for six months of additional élevage with occasional stirring of the lees. This is a crazy complex white with citrusy, almost oily aroma. Full bodied but with zippy acidity to its greep apple, lemon zest, grapefruit pith fruit and salty, smokey minerality. There’s tons of waxy, honeyed texture as well and the finish goes on for days. Clos dels Guarans is located in Santa Margarida i els Monjos, a small village in the southwest corner of the Massís del Garraf, the coastal mountain range that lies at the southern end of the Penedès appellation. This is a project from Jordi Raventos, of the famous Cava family.
