100% certified organic Chardonnay from 60-70 year old vines planted by winemaker Jean-Louis’s grandfather. Saint-Bris is in the north of Burgundy, about 8 miles east of Chablis, and is primarily known for Sauvignon Blanc. Hand harvested. Fermented with native yeasts and aged in 600l demi-muid barrels (5% new) for 10 months. Minimal sulphur at bottling. Complex notes of fresh peach, apple, white flowers and some creamy vanilla hazelnut oak notes, undercut by lemon zing and fresh apple acidity and a soft, rounded mouthfeel with a long finish. The Bersan family have been living in the village of Saint-Bris for many generations (since 1453, to be exact!). Their winery and cellar lie in labyrinthine caves built by the Templar monks as a secret refuge for the villagers between the 11th and 13th centuries.
