100% Pinot Noir from vines averaging 40 years old. Pascal and Laurent Borgeot own 50 acres of vines across four communes and are very respectful of their land, ploughing to remove weeds as opposed to spraying and using only organic fertilisers. Hand harvested, sorted then destemmed. Around a week of cold maceration before fermentation in open top steel vats with twice daily pigeage. Aged in used barrels for 10 months. Lovely aromas of raspberry and blue berry with hints of earthiness. Medium-bodied, round and smooth on the palate with some structure and well-balanced with firm acidity. Elegant and balanced. Domaine Borgeot, in Rémigny, was founded in 1903 and is now run by brothers Laurent and Pascal Borgeot, the fourth generation of their family to manage this domaine.
