100% organic Chardonnay sourced from two parcels of 25-year-old vines planted on white clay soils. It is partially fermented in sandstone amphorae (20%) before ageing in a combination of these, 500-litre barrels and Stockinger foudres. Bottled unfined and unfiltered with zero sulphur- ø/ø! A traditional style of Burgundy with a reductive note of matchstick and just a hint of oak. Crisp clean and a touch nervy with loads of lemon oil, thyme and lemon grass aromas.
