100% organic Pinot Noir from the Côtes d’Auxerre, in the north of Burgundy just west of Chablis. Hervé Felix is one of the oldest producers in the region, having farmed there for over 400 years. Fully destemmed, wild-fermented in stainless steel tanks, and aged predominantly in seasoned French oak barrels with a tiny proportion of new oak. 13.5% alcohol. Vivid cherry-red appearance with aromas of cassis, wild strawberry, blackberry, forest berries, cloves, and a touch of pencil shavings. Direct and savory structure featuring fresh red berries, beetroot, graphite/ferrous mineral components, light spice, and smooth, succulent, silky tannins. Definitely overdelivers for the price point.
