100% biodynamic Chardonnay from several parcels 20-55 years old located on a south-facing slope of Bouzeron’s valley, sheltered from summer’s north wind during ripening. 80% of the fermentation and aging is in foudre and 20% is in barrel. All native yeasts. Temperature control is the only intervention. This is a vin de garde- it’s meant to be aged. It is made from the fruit of old vines on a predominantly limestone terroir, and in its youth displays a pure mineral character. Patience, however, is urged: only after five to seven years does this wine reveal the full scope of its finesse and complexity of aromas. As a young wine, it shows a high toned character of white flowers, citrus, pear and smoke. Medium bodied, both creamy and tingly, it’s super clean and intensely mineral and fresh.
