100% Chardonnay. Planted in 1999, Dash Farms sits at nearly 1500 ft. on the southern granitic slopes of Mt. Alexander (Leanganook). Hand harvested, partially crushed by foot and gently pressed. Fermented and lees aged for 1 year in new Stockinger 300l oak and Burgundian barrels, followed by four months in stainless steel on fine lees, before racking and bottling, unfined and unfiltered with a small dose of sulphur. 13% alcohol. 125 cases made. Pale with a green edge, this lean, vibrant and energetic wine offers glass filling aromas of crushed rock, salted lemon and grapefruit rind, jasmine and spice. Flavors carry through to a dense and powerful palate with savory complexity and exceptional, exciting acidity. Feel free to age for 10 years, For Chablis fans!
