100% Sauvignon Blanc from a single, 2.5 acre vineyard planted in 1988 on calcareous soils in Santa Margherita. Farmed organically but not certified. Softly whole cluster pressed, fermented and aged simply in steel. 12.7% alcohol. Only 5,000 bottles are made. Established in 1982, La Cadalora farms about 30 acres of vines in the town of Santa Margherita, in the southernmost part of Trentino. Fragrant and intense notes of elderflower, peach, melon, guava, lemon blossom, and subtle hints of tomato leaf or boxwood. Dry, light-bodied, and gently oily yet crisp, balanced by a lively, refreshing acidity, good minerality, and a soft floral finish. Ideal with mixed grilled fish, seafood, asparagus dishes, vegetable risottos, and white meats prepared with herbs.
