Hand picked and given 36 hours of whole cluster maceration, before fermented with native yeasts in old, neutral barrels. Bottled unfined and unfiltered with no sulphur additions- zero/zero! 190 cases made. 13.5% abv. Interesting, unique and delicious. This is a full bodied yet bright Riesling that will make an incredible food pairing. Green apple, pear, grapefruit, crushed stone, honey, spice and a hint of straw on the nose. Bone dry and high acid on the palate, with a fleshy richness and plenty of power. Finishes salty and mineral, with a lingering, juicy, cleansing acid bite. Incredible food wine.
