After destemming, they undergo another round of sorting on a second belt before being delivered into wooden vats for fermentation. Manually plunged by foot, ensuring gentle and thorough maceration for 10 to 15 days. Aged in lightly toasted French barriques (5% new) for malolactic fermentation. Following 12 months of aging, the wine is transferred to cement vats for an additional 6 months before bottling. On the nose, it presents elegant and delicate aromas of white flowers and fruits, with subtle green notes in the background. The palate is light and very fresh, with a youthful and lively character.
