100% organic and hand harvested Chardonnay from various plots of the famous clay-limestone plateau on Portlandien soils to the northeast of the Chablis Grand Cru amphitheater, this wine is aged on its lees for 6-10 months, depending on the plot, in stainless steel vats before being bottled. Citrus aromas and a lovely zestiness give way to a bright, fresh, clean finish that maintains the characteristic salty mineral quality for which the wines from this region are so well-known. This is a leaner and more restrained style that is the epitome of Old World elegance. Excellent quality to price ratio here. This is the new name of what used to be Domaine du Chardonnay, a 70 acre estate spread out across Petit Chablis and four Premier Cru sites.
