100% Cabernet Sauvignon, mostly from Yountville but also various vineyards across the valley, all farmed sustainably or organically. The grapes are hand harvested and fermented using all native yeasts in stainless steel tank. After primary fermentation the juice is racked to French, oak barrels to undergo malolactic fermentation. Aged for 17 months in 50% new French oak. 13.9% alcohol. This juicy, ready to drink Napa Cab is fruity, dry and full bodied without being overripe. It's got classic Napa Cab notes of blackberry, plum and mint with a judicious amount of oak showing itself in perfect amount of vanilla and dark chocolate notes. Super smooth, with fine silky tannins and balanced acidity.
Jamey Whetstone moved out to Napa Valley from his home in South Carolina to manage Mustards Grill in 1996. Simply captivated by the community, lifestyle and culture of wine country, he found himself quickly growing roots. By 1998, he had begun his winemaking education at Turley Wine Cellars where he would remain in his apprenticeship until 2005. During that time, he spent a summer sabbatical working for the Seysses Family at Domaine Dujac in Morey-Saint-Denis and laid the groundwork for Whetstone Wine Cellars in 2002.
The Time Place Wine Co. works within California’s top AVA’s and includes Chardonnay from Monterey, Pinot Noir from Santa Barbara, and Cabernet Sauvignon from Napa Valley. Jamey’s winemaking style is one that accentuates the characteristics of each place, but with a deft hand and judicious use of oak so as to allow the vineyard to shine through.
