100% Mataro (Mourvèdre), sourced from a 1950s block planted on schist and limestone soils and farmed organically and biodynamically. Destemmed, 90% fermented in tulip-shaped concrete vats and the remainder in half-ton picking bins with punchdowns by hand. After two weeks on skins, the components were pressed together back to concrete for malolactic fermentation and aging. After racking, a small amount of reserve juice from a 75 year old vineyard was added. Unfined and unfiltered with minimal sulphur. 14% alcohol. Flinty and savory; give it time and air in the glass and juicy red licorice , ripe black fruits and black pepper will present. Medium weight and juicy. The red fruited palate finishes with a wash of acid and mellow tannins.
