100% Sémillon farmed organically and biodynamically. After hand picking, the fruit was transferred direct to the press, where free run and pressings components were kept separate. The free run was settled and racked for fermentation in steel with gentle lees stirring. The pressings were fermented on heavy solids to favor a textured style. A further small parcel was kept separate to ferment on skins for 12 days. The pressings and skin contact parcels were then blended back into the free run (10% of each) in the final blend, before partial malo and aging in steel and old oak. Pours a beautiful lemon color and gives off aromas of lemon rind, yellow peach, wet stone, tonic, honey. Bone dry, with ripping acidity and a salty/tangy/pithy lemony character. Drink or hold for another 3-5 years. Excellent stuff!
