100% organic (pending certification) Chenin Blanc from chalky clay soils. The Boutets have excellent vineyards in the small Vouvray appellation with the famous Domaine Huet’s vines as neighbors to their vineyards! These are located in a prime spot on the Rue de la Vallée Chartier, which slices through the première côte, climbing from the valley floor up to the plateau. Fermented with native yeasts and aged six months on the lees in stainless steel.
Aromas of white peach, green pear, and perfumed chalk. The palate is fresh and mineral-driven, balancing bright acidity with subtle hints of vanilla and floral energy. Medium bodied and very fresh.
Christophe Boutet is the co-manager (one of only two employees) at Domaine Boutet Saulnier, and has been there since founding it in 1997. He has since produced a range of wines including sparkling wines and demi-sec wines, as well as the delicious dry Vouvray that we list. He has always been concerned about sustainability and makes several concessions in the vineyard with this aim in mind, such as growing grass between vines to improve the health of the soil and using natural yeasts instead of cultured.
