100% organic Sauvignon Blanc. Hand harvested and fermented with native yeasts in steel. Aged in a combo of 70% tank and 30% wood (foudres and used 400L barrels) and for 11 months. 7,000 cases made. This small appellation is located just south of the Sancerre region, and includes several villages. The Pellé vineyards are located in and around the village of Morogues, and they are probably the best known, high-quality producer from the appellation. The soil is very similar to that of Sancerre–clay and chalk, and thus the wines can be easily mistaken. This is classic, racy Sauvignon Blanc with white flowers, citrus, salinity and minerals. Medium bodied and round, with high acidity and a long, mineral-laden finish. Excellent for oysters, goat cheese, a Niçoise salad or any seafood dish.
