The grapes are brought into the winery in stainless steel bins and sorted by hand. The grapes are then sent directly into the press for the first juice, which is free-flowed into stainless steel tanks. There is no malolactic fermentation. Pale salmon pink in color. Peach and earthy on the nose. Strawberry, minerals, salt, citrus, lime, and apple on palate. Medium to full body. High to medium acidity. Complex, layered structure that grows in the glass, with a lingering finish. The Constant family has been making wine from the same plots since 1288 (no, not a typo).
