This 100% Chardonnay is sourced from three organically and biodynamically farmed vineyards at the foothills of Chaintré: Les Chambardes, Les Pelouses, and Les Jonchayes. The wine is fermented with native yeasts in thermoregulated tanks and aged for 10 to 11 months on the fine lees before being bottled without fining.
Dominique Cornin established his eponymous estate in 1993 in the Mâconnais village of Chaintré and is now joined by his son, Romain. The family manages 12.5 hectares of vineyards with a focus on low-intervention viticulture and preserving ancient vines, some of which are over 100 years old.
The nose is elegant and expressive, featuring aromas of Meyer lemon, candied pineapple, and honeysuckle accented by fresh ginger. On the palate, the wine is dense and layered with a stony mineral texture, offering flavors of lemon curd, mango, and lithe almond undertones.
