100% organic Gamay from 50-60 year old vines at the highest point between the Loire River to the north and the Cher River to the south. Short pruning and green harvest are used to lower the yield. Manually harvested grapes are placed into 50 lb. crates after sorting in the vines. Cases are brought within the hour to the cellar, to avoid crushing, premature fermentation, and to avoid the use of sulfites. Native yeast fermented, the grapes then undergo carbonic maceration in stainless steel tanks.Aged in stainless steel. No sulphur additiions- zero/zero! Don’t be scared- this natural wine is super clean, juicy, fruity, and almost chuggable. Light in body and dry but with jammy cherries, blackberries, cranberry, tons of lifted floral notes and hints of leather and earth. Light in body with juicy acidity and low tannin.
