Criminally delicious! This is one of the most thirst-quenching, fun and unique white wines we’ve tasted this summer. It’s 100% Sylvaner - an ancient, underrated white grape grown mainly in western Germany, Alsace, France and in Alto Adige in Italy known for it’s boisterous peach-like fruit contrasted by subtle herbal flavors. This version comes to you from the Central Coast. Fermented on thin lees for 3 weeks at 55*F. Aged in 500 liters neutral wood puncheons. Unfiltered. Only 200 cases were made.
Light, bright, fresh and clean, with a smooth, lemon-sorbet like texture.. Subtle notes of white flowers, granny smith apple, and Asian pear, peach and herbs. This light table wine is very versatile, with its subtlety making it pairable with so many things- including notoriously hard-to-pair greens like asparagus, artichoke and arugula.
Union Sacré is one of the most unique wineries on the Central Coast. Devoted to Alsance varieties only thing that can be said is it is treading a new path. While other chase more mainstream things, this label, with its French born and raised winemaker, is doing things in a different way. Xavier Arnaudin studied winemaking in France and was supposed to go to Argentina for his first international winemaking internship. However, due to an unfortunate happening, he ended up in Paso Robles. Since arriving, he has never looked back. Made by two long-time friends, Xavier and Philip, who arrived at the Central Coast from opposite ends of the Earth. Xavier is a WSET certified, Oenology degree holder from France, Philip is a self-taught designer from Michigan who kind of misses living in a van. Between the two of them, Xavier and Philip have 25+ years of experience working in Central Coast wineries.
90 points, Wine Enthusiast. "This uncommon grape for California sings an interesting song in this bottling, starting with aromas of white melon and white spring blossoms. The palate offers lemon-sorbet and grapefruit-peel flavors, atop a smooth texture. (MK)"
