100% estate grown Nero d’Avola, farmed organically and biodynamically. Soils are red clay with subalpine sands composed of limestone & silica. Spontaneous fermentation in concrete vats using indigenous yeasts. Aged 9 months in concrete vats followed by 3 months in bottle before release. Minimal intervention and little if any sulphur use. This wine is alive with juicy red cherries, sun-dried herbs, crushed stones, and a hint of smoky earth. It’s medium-bodied but super fresh, with soft tannins and a savory, mineral snap on the finish. Giusto Occhipinti (Arianna’s uncle) of COS is a benchmark producer in the Vittoria appellation of Sicily, and certainly one of the most important and influential producers in all of Sicily if not Italy as a whole.
