100% organic Dolcetto from two estate plots in Marcarini and Vallegrande in Treiso. Vines are 40-50 years old. Winemaking is essential with native yeasts fermentations, minimal use of sulfites and the exclusion of any additives. Aged simply in stainless steel. Bottled unfined and unfiltered. 13.5% alcohol. This Dolcetto is a classic Piemontese everyday wine, juicy and bright, with notes of black cherry and blackberries and a dry finish. Light bodied, fresh and vibrant, this is ideal to accompany the most traditional Italian dishes like a Bolognese, pizza or grilled sausages. Great with a slight chill. Ca’ del Baio, one of the most classic names in Barbaresco is now in its 4th generation, with sisters Paola, Valentina and Federica following in the footsteps of their parents Giulio and Luciana. Together they farm 77 acres of estate vineyards mostly in the villages of Barbaresco and Treiso.
