100% estate-grown Dolcetto. Hand-harvested. Fermented in stainless steel to preserve fruit purity; aged briefly in tank and bottle for freshness. ~12.5–13% ABV. No oak influence. No makeup. Just fruit, earth, and the kind of structure that says “pour me with food and don’t overthink this.” Black cherry, crunchy plum skin, violets, sweet herbs, and a snap of licorice. Medium body, lively acidity, and tannins that feel like they were designed for cured meats and cozy conversations. Finishes dry, juicy, and a little savory, with a suggestion of almond skin and wild berry bramble. Serve slightly cool (55–60°F). A quick 10-minute pop-and-pour works; it doesn’t need therapy or a crystal decanter. It just needs a table and people you like.
