100% organic (uncertified) Chardonnay from a single, 2 acre vineyard, thirty five years old and planted on silty-clay soil with many calcareous pebbles. Pressed, settled, native yeast fermentation and aging on the lees for 11 months in used barrels. Minimal sulphur additions. Made in a Chablis-like style, this awesome white Burg is still young and tightly wound, with pure apple and pithy lemon, salty tang, white flowers, a light but distinct nuttiness and hints of brioche and cream. Medium bodied, with zingy medium-plus to high acidity. Clément Lavallée comes from a long line of Chablis growers and winemakers, but the 2019 vintage was the first under his own label.
