Co-fermenting local Glera with small proportions of Chardonnay and Pinot Gris, the organic fruit is direct-pressed and begins fermentation spontaneously with native yeasts in neutral tanks. Before fermentation finishes, the wine is bottled under a crown cap to naturally trap the remaining carbon dioxide, creating a soft, persistent, and fine effervescence. Left unfined, unfiltered, and resting on its lees until you pop the bottle. Azienda Agricola Durante is an family-owned estate situated at the foot of Montello in the northern reaches of Veneto’s Treviso province. Managed by Lino Durante alongside his sons Ivano and Michele, the family works across an 45 acre property historically known as “Le Spinée” (a name referencing prickly wild brambles that grew on ancient monastic land).
