An unspecified blend of Chardonnay, Pinot Noir, Pinot Meunier and Pinot Blanc from vineyards in Kent, Sussex and Essex. Cool fermentation in stainless steel was followed by full malolactic fermentation. Maturation on fine lees in tank for six months before bottling and average 18 months further aging on lees in bottle. The dosage is 8 grams per liter. Classic, very Champagne-like notes of citrus and white fruits, brioche and hazelnut. Dry but not bone dry, medium bodied, fruity, crisp and fresh. Perfectly balanced acidity with a very Champenoise mousse. Wonderful as an aperitif. Chapel Down is the largest producer of English wine, with over 950 acres under vine.
