The Cotes d’Auxerre neighbors Chablis, and the soils here are of the same chalky limestone that is found in Chablis. Hand harvested and made using traditional method. Chardonnay and Pinot Noir fermented separately; 85% in tank and 15% (vin de réserve) in barrique. All native yeasts. Aged six months in separate vats then blended. At least 24 months on lees. Zero dosage. There is zero dosage, but it doesn’t come across as harsh or unbalanced. Classic notes of bruised apple, toasted nuts, and a hint of pine and citrus zest enliven this delicious wine. It is racy and refreshing, but with great depth and length. Édouard Lepesme produces only a small amount of high-quality wine and sells most of his fruit to other local winemakers.
