60% Pinot Meunier, 30% Chardonnay, 10% Pinot Noir, all farmed organically. All stainless steel. The vineyard in Chavot on the southern slopes of Epernay has been farmed by the Batiste family since the 14th century. This tiny, 800 case production from Eric Lebeau and Anne-Marie Batiste is aged for more than 36 months on the lees and uses one-third reserve wine. That means the bubbles are persistent and tiny, and the lees aromas are both nutty and bread-y. Its bright and fresh flavors of green apple, citrus, and white flowers dance on the palate, while its creamy texture adds a touch of luxury to every sip.
